These mincemeat cookies are made with festive spiced fruit mince for a delicious holiday twist on traditional thumbprint cookies. They are a great way to use up any leftover fruit mincemeat after making my easy mincemeat tarts.

Ingredients
Fruit mincemeat: keep things simple with a jar of fruit mincemeat. Use the best quality your budget will allow. You could also use homemade fruit mince.
Plain flour: also known as all-purpose flour. It's important to use flour that does not have any rising agents in it.
Granulated white sugar: white sugar is best in this recipe. You could use castor sugar if you prefer.
Butter: regular unsalted butter is best for this recipe.
Egg: I used a large egg in this recipe, approx. 2 oz (55 gms) each with shells before cracking.
Vanilla extract: sometimes also called vanilla essence, depending on where you live. You can use either, or imitation vanilla essence, depending on your preference and budget.
Baking powder: is a common ingredient in baking, used to help cookies puff up and have a lighter texture. For the best results use fresh baking powder and not one that's been sitting around the cupboard for a while.
How to make mincemeat thumbprint cookies

Make sure your butter is at room temperature first. Line a baking tray with parchment paper. Pre-heat your oven to 350°F (180°C/160°C fan forced).
Cube the butter, then add the sugar and cream together. Add the egg and vanilla and mix. Remember to scrap down the sides of the mixer.
Sift the flour and baking powder together. Add to the creamed butter and sugar and mix carefully but well. The mix may seem a little dry, but keep carefully mixing and the dough will come together.
Roll one tablespoon of dough (or 20gms if you feel exact :D) into a ball and add to the lined baking tray. Continue with the rest of the dough.
Use your thumb to create a small print or dent in the dough balls. Fill the thumbprints with fruit mincemeat.
Bake in the oven for about 15 minutes or until golden around the edges.
How to serve
To serve these fruit mince cookies pop them onto a plate and enjoy! Fabulous on their own when friends and family pop over during the holidays, or as part of a wonderful festive dessert table. Delicious!
How to store
These festive spiced fruit thumbprint cookies will store well in a lined, airtight container for up to two weeks. After that they will still be safe to eat, but may start to go a little soft over time.

Mincemeat Thumpbrints
Ingredients
- 1 stick and ½ a tablespoon (125gms) unsalted butter
- ½ cup (110 gms) granulated white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 & ½ cups (225gms) plain flour
- ¼ cup fruit mincemeat
Instructions
- Line a baking tray with parchment paper. Preheat oven to 350°F (180°C/160°C fan forced).
- Cube the butter.
- Add the sugar to the cubed butter. Cream together until fluffy.
- Add the egg and vanilla to the butter. Mix well.
- Sift the flour and baking powder together.
- Add to the flour to the butter mix. Mix well.
- Roll 1 tablespoon size pieces (20gms) of dough into balls. Place on the baking tray.
- Press a thumbprint into each dough ball. Fill each print with mincemeat.
- Bake for approx 15 mins until golden brown around the edges.
- Allow to cool and enjoy!
