Mincemeat Thumpbrints

These mincemeat thumbprint cookies are a fun and festive addition to your Christmas dessert menu. Great for cookie exchanges or when guests pop over.

Ingredients

  • 1 stick and ½ a tablespoon (125gms) unsalted butter
  • ½ cup (110 gms) granulated white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 & ½ cups (225gms) plain flour
  • ¼ cup fruit mincemeat

Instructions
 

  • Line a baking tray with parchment paper. Preheat oven to 350°F (180°C/160°C fan forced).
  • Cube the butter.
  • Add the sugar to the cubed butter. Cream together until fluffy.
  • Add the egg and vanilla to the butter. Mix well.
  • Sift the flour and baking powder together.
  • Add to the flour to the butter mix. Mix well.
  • Roll 1 tablespoon size pieces (20gms) of dough into balls. Place on the baking tray.
  • Press a thumbprint into each dough ball. Fill each print with mincemeat.
  • Bake for approx 15 mins until golden brown around the edges.
  • Allow to cool and enjoy!

Notes

Fruit mincemeat:
You can use homemade or store-bought fruit mincemeat for this recipe.  
Storage:
These thumbprint cookies can be stored in an airtight container at room temperature for up to two weeks.
