Ah Halloween. One of the most anticipated and certainly one of the most fun holidays of the year! And what better way to celebrate with some fabulous homemade Halloween treats. These Halloween cake popsicles are the perfect spooky addition to a Halloween party or even amazing trick or treat candy. There are no less than five fabulous Halloween cake pops here, from super easy Monster/Frankenstein cakesicles to whimsical cartoon bat cakesicles. Most of them require non piping skills, just a sharp knife to cut up some candy and little melted chocolate to stick them on.

    Halloween cakesicles ideas:

Row of three bat cakesicles surrounded by candy cats.
    Bat cakesicles.

Bat cakesicles - these whimsical bat cakesicles are super cute! No piping skills needed, just some a little clever cutting with a sharp knife. I made these with a dark chocolate shell filled with box mix chocolate cake. For the decorations you will need: Oreos, candy eyes and soft candy that can be cut into thin square sheets. I used liquorish all sorts as they cut well and have good colours, but you could use try something else such as Starburst.

    Row of three jack-o-lantern cakesicles.
    Jack-o-lantern cakesicles.

Jack-o-lantern cakesicles - its not Halloween without jack-o-lanterns! I made these using orange candy melts and a store brought sponge cake I then added a little pumpkin spice mix to. Hey presto, pumpkin spice flavored cake without having to bake! For the decorations you will need soft candy that can be cut into thin square sheets. I used liquorish all sorts as they cut well and have good colours but you could use try something else such as Starburst.

Row of three mummy cakesicles, surrounded by candy eyes.
    Row of three mummy cakesicles.

Mummy cakesicles - these need a little piping but are very easy. To add some fun contrast I used white chocolate shell with my red velvet cake inside. They make a fabulous contrast when you bite into them! For the decorations you will need candy eyes and extra white chocolate to drizzle over the top.

Row of six monster cakesicles, all different, surrounded by candy eyes.
    Monster cakesicles.

Monster cakesicles - easy and impressive. In keeping with the monster/minions style I made all of my monsters slightly different. I used green candy melts with my red velvet cake inside (recipe coming soon). For the decorations you will need large and small candy eyes, and some sort of soft candy you can cut small strips out of. I used liquorish all sorts as they cut well and have good colors, but you could use try something else.

Row of three spider cakesicles, surrounded by spider sprinkles.
    Spider cakesicles.

Spider web cakesicles: Still simple but do need a little piping to make the webs. I used a white chocolate shell with a box mix chocolate cake inside. For the decorations you will need dark chocolate for drizzling and candy/sprinkle spiders. You can make these with just the spider decorations if you're not confident in your piping skills, but the webs are easier than you might think.

For more tips and tricks and lots of troubleshooting to make the cakesicle shells you can see my main post on how to make cakesicles.

    Ingredients

Ingredients, cake, chocolate, frosting, decorations (candy eyes pictures and white chocolate for mummy cakesicles).

Cake: choose your favorite cake flavor. You can make them all the same flavor or mix things up with different flavors. I used a combination of store brought vanilla sponge cake mixed with a little pumpkin spice mix, a box mix chocolate cake and my own red velvet cake in these (recipe coming soon). If you mix things up keep in mind as a guide you only need about ¼ to ⅓ of a cake to make about eight Halloween cake pops.

Frosting: choose a frosting flavor that complements your cake flavor. Regular vanilla is fine for most, but you could also use chocolate to go with chocolate cake. I use ready-made frosting to keep things quick and easy.

Chocolate or candy melts: you will need chocolate to coat the popsicles in and chocolate for decorating. This can be the same or different chocolate. You can use any type of chocolate you like such as white, milk, dark or even ruby, so long as it doesn't have any bits in it. You can use candy melts for brightly colored cake pops without having to add any food coloring. If you are using candy melts you may need to add a little refined coconut oil to get a smooth pourable consistency, depending on what brand of candy melts you are using.

Oil based green food coloring (optional): is different from regular water based food coloring you usually get from the supermarket. Its important to use oil based food coloring because the water in the other kind will make the chocolate seize. You can get oil based food colors from specialty baking stores, online and from some supermarkets.

Decorations: with a few simple decorations you can elevate your cakesicles from now to Wow! I use the following decorations to create all these cakesicles: soft candy that's easy to cut into thin squares, such as liquorish all sorts, large and small candy eyes, contrasting chocolate, sprinkle spiders and Oreos.

    How to make Halloween cakesicles

Blitzing cake into crumbs in food processor.
    Adding frosting to cake crumbs.
Cake crumbs and frosting mixed to form soft 'cookie dough' like ball.

Crumble the cake, either using your hands or breaking it up into chunks and give a blitz in a food processor for few seconds. Transfer to a bowl, add a little bit of frosting and mix well. You need less than you think! Add a smaller amount to start with, then add more if needed. At some point you will need to use your hands to work in the frosting. The mix should form a ball when you squeeze it in your hand but not be to dry or wet, similar to cookie dough.

Put the chocolate or candy melts into a microwave-proof bowl and microwave in thirty second bursts until its melted.

Working quickly, put about half to one tablespoon of chocolate into each cakesicle mold. Coat all of the inside of the mold with chocolate, either by moving the whole mold, or using a small spatula or spoon to 'paint' the chocolate up the sides of the mold.

    Swirling chocolate around molds.
Scraping chocolate of the edges of the molds.
Clearing hole for stick in chocolate.

Poke the ice cream stick in and out of the stick hole a couple of time to make a gap for the stick. Put the molds in the fridge for about ten to fifteen minutes to set. For stronger sides you can use a small spoon to add a second coat of chocolate to the sides.

Add cake mix to bottom of mold and stick on top.
Fixing cracks around stick with an extra blob of chocolate.
Adding cake mix to to of stick.

Press some cake and frosting mix into the bottom of the molds. Insert the stick. If the chocolate at the bottom where the stick goes in breaks up (this happens a lot), add a small dab of chocolate. This will fix the cracks and help keep the stick in place. Continue to fill with cake mix over the top. Do not over fill the molds.

Adding chocolate to top of cake mix to seal cake pops.
Popping cakesicles out of the molds.
Scraping excess chocolate off the edges with a sharp knife.

Top with extra chocolate to seal the back and scrap off any extra chocolate. Put in the the fridge to set again for about thirty to forty-five minutes. Once set carefully remove the from the molds. Use a small sharp knife to carefully trim any chocolate from the edges of the cakesicles, then decorate according to the instructions below.

    How to decorate Halloween cakesicles

Bats: Use a sharp knife to the Oreos in half. You will need extras! Sometimes they cut in half cleanly, sometimes they break. Scrap off the white filling.

Scraping off cream and cutting Oreos in half.
Oreo slices positioned for wings, with blobs of chocolate to stick them on.

Position two Oreo slices. Use a cakesicle to get the positioning right so the Oreos will form two wings. Be careful to position the cakesicle so it will balance on the Oreo pieces. Put a blob of melted chocolate each corner of the Oreo covered by the cakesicle, then place the cakesicle on top.

    Cutting square candy down.
Cutting the side of the triangle, starting in the middle of the top and going down to bottom right corner.
Cutting the other side of the triangle.
Showing small square that's been cut into one larger triangle, with two smaller, pointer triangles to the sides.

Use a sharp knife to cut out your bats ears and fangs. Cut your candy into thin slices. Cut a small square. Make the top of the triangle point in the middle of the square, then cut the line down to each corner. Repeat using another square. The bigger triangles make good ears, the smaller ones make good fangs.

Use blobs of dark melted chocolate to stick the ears, candy eyes and fangs into place on the front of the cakesicle. Allow to set completely before moving.

Jack-o-lantern: Use a sharp knife to cut out your candy into a thin square. Cut the square in half diagonally. Cut one triangle in half again, so you have two large triangles. These are your eyes. On the other triangle cut a tooth pattern into the long side for the mouth. Cut the tip of the triangle off the other side to give a flat bottom to the mouth. Use melted chocolate to stick the eyes and toothy mouth to the cakesicles.

Cutting thin candy square in half.
Cutting teeth into jack-o-lantern mouth decoration.
    Laying out jack-o-lantern decorations.
    Sticking jack-o-lantern decorations onto cakesicles.

Mummy: melt the white chocolate and mix it so its nice a smooth. Place it in a deposable piping bag or small zip lock bag. Cut a small hole in the corner. Drizzle a few lines of chocolate back and forth over the cakesicle, going over the other side of the cakesicle before doubling back again. Stick on two candy eyes. Continue to drizzle back and forth with chocolate, including a few lines over the edges of the eyes so it looks like they are peaking through the bandages. Allow to set completely.

Mummy cakesicles laid out ready to decorate, with candy eyes and piping bag of melted chocolate.
Drizzling a few lines of chocolate on first, then sticking on eyes.
Laying more chocolate over cakesicles to form mummy bandages.

Monsters: Cut lines for months or eyebrows out of candy. Use small blobs of melted chocolate on the back of the eyes and candy shapes to stick them to the cakesicles.

Laying out monster eyes and decorating before sticking on cakesicles.
    Sticking decorations onto monster cakesicles.

Spiders: melt the dark chocolate and mix it so its nice a smooth. Place it in a deposable piping bag or small zip lock bag. Cut a small hole in the corner. Drizzle an X across the cakesicle, making one line go all the way across, then moving onto the next line. Make a line down the center, then a side ways X, so you have five or so long lines. Carefully drizzle two circles over the lines. Stick on candy spiders immediately.

Piping lines of dark chocolate over cakesicles, then piping two circles over the top to form a web, and sticking spider sprinkles on top.

    How to serve

    Cakesicles on a serving plate.
    Serving cakesicles.

To serve pop onto a plate and enjoy! They're almost to cute to eat, almost!

    How to store

These cakesicles will store in an airtight container lined with baking paper on the bench for up to three days. Unless it's really hot and you are worried about the chocolate melting I don't recommend storing these cake pops in the fridge or freezer. The chocolate may sweat and start to go soggy. The bat cakesicles in particular can be a little fragile and the cookies can be prone to breaking, so take extra care when handling them.

    Equipment

    • Small open sided popsicle/ice cream molds and popsicle sticks.
    • Food processor (optional)

    Ingredients

    • 1 (21oz/600gms ish)  cake
    • 6 - 10ish tablespoons frosting
    • 1 lb (450gms) ish chocolate or candy melts
    • Decorations such as large and small candy eyes, spider sprinkles, Oreos and soft candy that can be easily cut into squares and shapes, such as liquorish all sorts.

    Instructions

    To make the cakesicle bases:

    • Put the chocolate into a bowl and microwave in thirty second bursts until its melted.
    • Working quickly, put about one tablespoon of chocolate into each mold. Coat all of the inside of the mold with chocolate, either by moving the whole mold, or using a small spatula to 'paint' the chocolate up the sides of the mold.
    • You may need to 'swirl' the chocolate around the molds for a few mins to ensure an even coat. Tip out the excess chocolate and scrap off the excess with a spatula.
    • Poke the ice cream stick in and out of the stick hole a couple of time to make a gap for the stick.
    • Put the molds in the fridge for about ten minutes to set.
    • If you want you can add a second layer around the edges with a small spoon. Allow to set again before moving on.
    • Crumble the cake it to bread crumbs, either in a food processor for a few seconds or with your hands. Add a small amount of frosting, maybe just one or two tablespoons to start with, and mix well. The mix should form a ball and be the consistency of cookie dough. Add more frosting slowly, mixing well between each addition until the right consistency is achieved.
    • Remove the set molds from the fridge. Press a small amount of the cake mix into the bottom of the molds. Do not fill about the stick hole line, this won't be very much. Insert the sticks and add a small blob of melted chocolate where the stick meets the mold on the inside. Allow to set for a minute or two. Fill remaining space with cake mix, taking care not to over fill and allow room for chocolate to seal the pops.
    • Top with extra chocolate to seal the cakesicles and scrap off any extra chocolate. Put in the the fridge to set again for at least thirty minutes.
    • Carefully remove the cakesicles from the molds.

    To decorate mummy cakesicles

    • Melt the white chocolate and mix it so its nice a smooth. Place it in a deposable piping bag or small zip lock bag
    • Cut a small hole in the corner. Drizzle a few lines of chocolate back and forth over the cakesicle.
    • Stick on two candy eyes. Continue to drizzle back and forth with chocolate, including a few lines over the edges of the eyes so it looks like they are peaking through the bandages.
    • Allow to set completely.

    To decorate jack-o-lantern cakesicles

    • Use a sharp knife to cut out your candy into a thin square. Cut the square in half diagonally. Cut one triangle in half again, so you have two large triangles. These are your eyes.
    • On the other triangle cut a tooth pattern into the long side for the mouth. Cut the tip of the triangle off the other side to give a flat bottom to the mouth.
    • Use melted chocolate to stick the eyes and toothy mouth to the cakesicles.

    To decorate monster cakesicles

    • Cut lines for months or eyebrows out of candy. Use small blobs of melted chocolate on the back of the eyes and candy shapes to stick them to the cakesicles.

    To decorate bat cakesicles

    • Use a sharp knife to the Oreos in half. Scrap off the white filling.
    • Position two Oreo slices. Use a cakesicle to get the positioning right so the Oreos will form two wings. Be careful to position the cakesicle so it will balance on the Oreo pieces.
    • Put a blob of melted chocolate each corner of the Oreo covered by the cakesicle, then place the cakesicle on top.
    • Use a sharp knife to cut out your bats ears and fangs. Cut your candy into thin square slices.
    • Cut a small square. Make the top of the triangle point in the middle of the square, then cut the line down to each corner. Repeat using another square. The bigger triangles make good ears, the smaller ones make good fangs.
    • Use blobs of dark melted chocolate to stick the ears, candy eyes and fangs into place on the front of the cakesicle. Allow to set completely before moving.
    • The Oreo wings are fragile and prone to breaking so be careful when storing and moving.

    To decorate spider cakesicles

    • Melt the dark chocolate and mix it so its nice a smooth. Place it in a deposable piping bag or small zip lock bag. Cut a small hole in the corner.
    • Drizzle an X across the cakesicle, making one line go all the way across, then moving onto the next line.
    • Make a line down the center, then a side ways X, so you have five or so long lines. Carefully drizzle two circles over the lines. Stick on candy spiders immediately.

    Notes

NB.  I only had two sets of four molds, so eight in total.  The time taken reflects the fact I needed to do this in successive batches to make all of them.  If you have more molds you could make these quicker BUT you still need to leave the same amount of time for them to set, i.e. at Least ten minutes and then at Least thirty minutes to set in the fridge.

These are so cute! Honestly, I didn't even know cakesicle molds existed...what?! But these would be so fun for the neighborhood Halloween party and I think even letting the kids decorate the premade cakesicle would be a hit!
