Parents of kids all shout hooray, these PJ Masks inspired popsicles are here to save the day! In three fun fruit flavours, Gekko Grape, Catboy blue lemonade and Owlet raspberry strawberry!

My eldest son loves PJ masks so I just had to make him some special PJ Masks inspired popsicles for his birthday. I have used whole fruits here and minimised the sugar where possible, but it is treat food after all.
To get the really bright popping PJ Mask themed colours I resorted to using standard food colouring, mostly because I ran out of time track down the more natural stuff. The Owlet raspberry strawberry did not need any colouring at all, the berries have a natural red colour. The Gekko grape was more challenging. Initially I tried using spinach to colour them but ended up with dark green bits floating in them, not a good look! You could try juicing some spinach leaves instead to get the juice and a more natural green colour. The blue was really hard. There are not many blue foods and those that exist tend to give a purple colour, such as my blueberry and cashew ice cream. Amazing colour, but not blue. If you really want natural blue there are a few options you could try, such as blue spirulla powder or blue pea flower powder.

Or you could do the easy, time poor thing like I did and resort to good old food colouring.
Not matter how you colour them these fun fruit popsicles are sure to be a welcome addition to any PJ Mask party for your little ones 🙂
To make the PJ Masks inspired popsicles

This recipe makes four of each colour of popsicles. If your popsicle moulds hold less than 12 popsicles in total you will need to make them in batches over a few days like I did.
To make the Owlet strawberry raspberry popsicles
Hull the strawberries and cut off tops. Add to the chopping bowl of an immersion blender or food processor and blend well. Add raspberries and blend until combined. Taste the mix, if using out of season berries they may be a little tart and you may need to add sugar.
Transfer to popsicle moulds, add sticks and freeze overnight.
To make the Gekko grape popsicles
Pick grapes off the stems and add to the chopping bowl of an immersion blender or food processor and blend well until smooth. Taste the mix. If its to sour you may need to add a bit of sugar. Mine were sweet enough so not additional sugar was needed. Add several drops of green food colour until desired brightness of green in achieved.

Pour into moulds, add sticks and freeze over night.
To make the Catboy blue lemonade popsicles
Juice the lemons, measure and strain lemon juice into a large measuring jug. Add sugar and top up jug with water until it reaches 1 ¾ cups (400ml) in total. Add several drops of blue food colour until desired brightness of blue is achieved.
Pour into moulds, add sticks and freeze overnight.

To serve the PJ Masks inspired popsicles:
Remove from moulds. I recommend doing this in advance of the party and popping them into a container lined with baking paper in the freezer. Hand out the delicous treats to your little super heros and bask in all your hard earned work the make the PJ Masks party a success!
