These coconut popsicles are fresh, creamy and delicious. With just four ingredients and no refined sugar they are a vegan treat the whole family will love.

Coconut seams to be one of those flavors that you either love or hate. My husband is the latter but I'm very much the former. And what's not to love? These creamy coconut pops have layers of flavor. With coconut sugar and coconut milk to enhance the natural flavors and keeping them a refined sugar free treat.
The coconut adds a wonderful richness of flavor but it does color these pops, which is why they are coconut beige instead of bright white! If you want really white pops you could replace the coconut sugar with white sugar and a little coconut essence instead. Are coconut popsicles healthy?
It depends on the coconut popsicle, what's in it and what you consider healthy. Coconut popsicles are usually dairy free, which some may consider to be more healthy. Making your own popsicles at home is healthier, as you can know exactly what's going into them and can control the amount of sugar, fat and anything else. At the end of the day they are treat food so as with anything enjoy in moderation.
Ingredients
Coconut milk: look for full fat coconut milk with minimal other ingredients. For extra creamy popsicles you could use coconut cream. For a lighter version you could use half coconut milk and half coconut water.
Coconut sugar: a little coconut sugar boots the coconut flavor of these popsicles and keeps them refined sugar free. You could replace the coconut sugar with your other sweetener of choice such a maple syrup, brown or white sugar or even honey. If you are using one of these other sugars and want to boost the coconut flavor you could add a little coconut essence.
Vanilla extract: you can use vanilla extract or essence or even a scraped vanilla bean in this recipe, depending on your taste and budget.
Salt: a touch of salt helps balance the sweetness of these popsicles and adds a savory note. You can leave it out of you prefer.
How to make coconut popsicles
Give the can of coconut milk a good shake first to incorporate any cream that may have settled out.
Pour the coconut milk into a jug. Add the coconut sugar, vanilla and salt and mix well. If you are have trouble getting the coconut sugar to mix in properly you can let the mix stand for five minutes then stir again.
Hot tip: make sure there is enough room in your freezer for your popsicle molds before filling them or there will be tears!
Pour into popsicle molds and add sticks. Freeze for at least four hours, or until solid.
How to serve
Remove from the popsicle molds and enjoy!
How to store
These popsicles will store well in an airtight container with some baking paper between them to stop them sticking together for up two months, if they last that long!

Coconut popsicles
Equipment
- Popsicle molds and sticks
Ingredients
- 1 can (13.5 fl oz/400 mls ) full fat coconut milk
- 2 tablespoons coconut sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Give the can of coconut milk a good shake to incorporate any cream that may have settled. Open the can and pour the milk into a jug.
- Add the coconut sugar, vanilla and salt and mix well.
- Pour into molds, add sticks and freeze for four hours or until firm.
- Once frozen remove from the molds and enjoy!
