Vegan apple crumble
This vegan apple crumble is bursting with all wonderful fall favors you love. Serve it with my vegan custard or ice cream for the perfect cozy night in.
- 2.2 lbs (1kg) apples, approx. medium apples
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- 2 tablespoons maple syrup
- 1 cup (100gms) rolled oats
- 1 cup (75gms) coconut
- ¼ cup (63mls) maple syrup
- ½ cup (113 gms) vegan butter or margarine
To make the apple filling
Peel and core the apples and dice into large pieces. Put them into a pot with the maple syrup, cloves and cinnamon and couple of tablespoons of water.
Bring to bubbling, then simmer for twenty of so minutes with the lid on, stirring frequently until the apples are starting to soften but still have some bite.
Turn off the heat and roughly mash, leaving plenty of lumps.
Put the apple mix into a baking dish and smooth down.
Pre-heat your oven to 375°F (190°C/170°C fan forced) and make your crumble topping.
To make the crumble topping
Add the oats, coconut and maple syrup to a bowl and mix well.
Put the margarine in a microwave proof bowl and melt. Add the rest of the crumble topping ingredients and mix well.
Spoon the topping over the apple mix in the dish, leaving plenty of bumpy bit to go nice and crispy.
Bake in the oven for thirty five minutes or until a lovely golden brown.
Serve immediately with lashing of my vegan custard or on its own. Delicious!
