Easter rice krispie treats

These easy Easter rice krispie treats are a fun and colorful addition to your Easter celebrations. Perfect to make with your little bunnies this Easter!

Equipment

  • 12 hole muffin tins

Ingredients

  • 7.5 oz (215gms) marshmallows
  • cup (75gms) unsalted butter
  • several drops green food color
  • 4 ½ cups (160gms)_ rice krispies
  • ¼ teaspoon vanilla extract
  • neutral spray cooking oil to grease the tins
  • 1 packet (125gms) mini eggs
  • ½ block (90gms) ish white chocolate
  • 1 tablespoon pastel colored sprinkles

Instructions
 

  • Add the butter to a large pot and head on low. Add the marshmallows. Heat on low to medium low, stiring frequently until all the marshmallows are melted and mixed into the butter.
  • Add the vanilla extract and green food color and mix well. Spray the muffin tins with some baking oil.
  • Add the rice krispies to the melted marshmallows and mix well. Spoon the mix into the greased muffin tins. Ideally create a shallow dip in the top big enough to put three mini eggs into.
  • Allow to set for about two hours at room temperature.
  • Remove the nest from the muffin tins. Chop the white chocolate into long thin pieces. Put three mini eggs on top of each treat.
  • Use the white chocolate sticks to build a nest around the mini eggs. Try to have the stick poking out and overlapping each other.
  • Finally dust with some sprinkles and you're done!

Notes

Egg variants:
I used cute mini eggs in these nests, but you can use whatever kind of small Easter egg candy you like, or even try putting just one larger egg in the center for and eggcellent treat :D
Storage:
These fun rice krispie Easter nests will store well in an airtight container lined with parchment paper for up to one week.  After this they will still be safe to eat, but may start to go a little stale over time.
