Cotton Candy Ice Cream

This homemade cotton candy ice cream with swirls of pink and blue cotton candy flavor is just like your favorite fairground treat but in a delicious ice cream!

Equipment

  • Electric hand beaters or stand mixer

Ingredients

  • 1 x 14 oz (397 gms) can sweetened condensed milk
  • several drops pink and aqua food coloring
  • 2 cups (500mls) thickened cream
  • 1 & ¼ teaspoons (10gms) glucose syrup
  • Several drops cotton candy flavoring

Instructions
 

  • Put your storage container in the freezer to chill.
  • Divide the sweetened condensed milk into two bowls. Add the aqua food color to one bowl and the pink food color to the other and mix well untill you are happy with the depth of color. Keep in mind the color will dilute when you add the cream.
  • Measure the cream. Add the glucose syrup to a small microwave proof bowl with two tablespoons of the cream. Heat the cream and glucose syrup for a few seconds until jus warm. Stir well to combine.
  • Put the rest of the cream into a bowl or stand mixer. Mix on low and slowly add the glucose syup mix and cotton candy flavoring. Increase the speed and whip until firm peaks form.
  • Divide the whipped cream evently between the two bowls of colored condensed milk. Gently fold in the cream, taking care to knock out as little air as possible.
  • Layer the two mixed into your storage container. Cover and freeze for four hours or until firm.
  • To serve remove from the freezer, scoop and enjoy! Fabulious on its own or topped with a little cotton candy. Delicious!

Notes

Storage:
This no-churn ice cream will store well in a covered container in the freezer for up to two months.  After this it will still be safe to eat, but the texture might be a little icy.
Glucose syrup is available from supermarkets, online and specialty baking stores.  You can also substitute with the same amount of light corn syrup.  If you leave it out your ice cream will freezer quite firm and you will need to let it soften on the beach for a few minutes before scooping.
