Ingredients

  • 1 & ½ cups (225gms) white self raising flour, plus extra for dusting
  • 1 cup (250gms) Greek yogurt
  • 1 & ½ tablespoons (30gms) butter
  • 2 tablespoons (30gms) brown sugar
  • ½ tablespoon ground cinnamon

Optional cream cheese glaze

  • ¼ tub (1 oz/ 55gms) full fat cream cheese
  • cup (55gms) icing sugar/powdered sugar
  • teaspoon vanilla extract
  • ½ tablespoon fresh lemon juice

Instructions

  • Put the air fryer onto 340°F (170°C) to heat up for five minutes.
  • Add the yogurt to the flour and mix well. You may need to switch to your hands at some point and continue to roll the dough in the bowl until all the flour is mixed in.
  • Pick up the dough and lightly flour the board again. Roll the dough out with a rolling pin until its about 30 by 15cm rectangle.
  • Put the butter in a microwave proof bowl and microwave for ten to twenty seconds to soften it a little. Add the cinnamon and sugar and mix well. Spread the mix out all over the dough.
  • Roll the dough up into a spiral along the long edge. Use a sharp knife to cut the dough into about eight pieces.
  • Put the scrolls onto the air fryer tray, spiral side up.
  • Bake at 340°F (170°C) for ten minutes then check on them. If they are not golden brown put them in for another few minutes.
  • While the rolls are baking make the cream cheese glaze.
  • Add the cream cheese, vanilla essence and lemon juice to a bowl. Beat well. Sift in the powdered sugar and beat well.
  • Take the cinnamon rolls out of air fryer. Eat immediatly while still warm, or drizzle with cream cheese glaze. Delicious!

Notes

NB: The cream cheese glaze freezes well.  I recommend making a double batch and popping it into the freezer.  You can grab out a couple of tablespoons and warm briefly in the microwave before drizzling over freshly air-fried rolls, making them even quicker and easier!
