Coconut popsicles

These coconut popsicles are fresh, creamy and delicious. With just four ingredients and no refined sugar they are a vegan treat the whole family will love.

Equipment

  • Popsicle molds and sticks

Ingredients

  • 1 can (13.5 fl oz/400 mls ) full fat coconut milk
  • 2 tablespoons coconut sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions
 

  • Give the can of coconut milk a good shake to incorporate any cream that may have settled. Open the can and pour the milk into a jug.
  • Add the coconut sugar, vanilla and salt and mix well.
  • Pour into molds, add sticks and freeze for four hours or until firm.
  • Once frozen remove from the molds and enjoy!
