Tangelo creamsicles

These easy tangelo creamsicles are a sweet, tangy, fun twist on the classic creamsicle that will take you back to your childhood.

Equipment

  • Popsicle molds and sticks
  • immersion blender or food processor

Ingredients

  • 1 & ¾ cups (450mls) tangelo juice *approximately 4 tangelos
  • ½ cup and 2 tablespoons (150ml) full fat greek yogurt
  • 1 teaspoon vanilla essence
  • 1 tablespoon (15gms) granulated sugar *optional, adjust to your taste

Instructions
 

  • Cut tangelos in half and squeeze juice. Strain into a deep bowl you can use an immersion blender in or food processor.
  • Add vanilla essence and greek yogurt and blend well.
  • Taste the mix and add sugar as needed. Blend well.
  • Pour into popsicle molds, add sticks and freeze until set, ideally overnight
  • Remove from molds and enjoy!

Notes

Tangelos are available from some supermarkets and fruit and veg stores.  If you can't get tangelos you can replace them with equal amounts of mandarin and grapefruit juice.  
This recipe also works well as a classic orange creamsicle.
