Plum compote

This plum compote is an easy and delicious breakfast, dessert or snack. With just five ingredients and no refined sugar, its on the table in under 30 minutes.

Ingredients

  • 6 medium (1.1lbs/ 500gms) plums
  • ¼ cup (63mls) water
  • 3 tablespoons (45mls) maple syrup
  • ¼ teaspoon almond essence
  • 1 teaspoon ground cinnamon

Instructions
 

  • Slice the plums in half and remove the stones. Then cut each half into quarters.
  • Put the water into a bowl. Add the maple syrup and almond and mix well. This will ensure the flavors are evenly distributed through out the plums.
  • Put the sliced plums into a medium to large saucepan. Pour the maple syrup mix over the plums and sprinkle with cinnamon.
  • Heat on a medium heat until bubbling. Reduce to a simmer, cover with a lid and cook for twenty to thirty minutes, stirring occasionally, until the plums are cooked and the syrup has thickened.
  • NB if the plums start to dry out before they are fully cooked you may need to add a splash more water.
  • Serve warm with a scoop of vanilla or sour cream ice cream, or cold with some yogurt and granola for breakfast, delicious!
