Mango popsicles

These gorgeous mango popsicles are full of fresh tropical mango flavor. They have just three ingredients and are super simple to make.

Equipment

  • Popsicle molds and sticks
  • Stick/immersion blender or food process

Ingredients

  • 3 medium (2.5lbs/1100gms ish) very ripe mangoes
  • 2 tablespoons (30mgls) fresh lime juice, approx one lime
  • 3 tablespoons white sugar

Instructions
 

  • Slice the mango flesh off the internal seed by slicing off each cheek, then scoring to create cubes, popping out, then cutting off the flesh.
  • Add the mango flesh to a deep jug you can use an immersion/stick blender in.
  • Slice and juice the lime, add the juice to the mango flesh.
  • Blitz the mango and lime until smooth.
  • Add the sugar and blitz again.
  • Pour the mix into the popsicle molds, add sticks and freeze for four hours, or until firm.
  • To serve remove from molds and enjoy!
