    Do you love Monster cherry mango pops? A sweet combination of cherry and mango swirled together. A yummy sweet treat, but as with many store-bought popsicles they are full of sugar and artificial colors. These homemade mango cherry popsicles are a great alternative. Bursting with fresh, juicy fruit and a couple of other simple ingredients to pump up the flavor.

    I've kept things light and fresh by making these delicious cherry mango popsicles without yogurt or other dairy. I find the mangos give them a wonderful almost creamy texture on their own and keeps them a vegan treat.

    Tips and tricks for making fruit popsicles

    • Choose fruit that is very ripe, almost to the point of being overripe for maximum sweetness and flavor. Using very ripe fruit means you can get away with adding less sugar or leave it out all together for a sugar-free popsicle.
    • For smoother popsicles blend the fruit well. Soft fruit such as mango can go in whole however fruit with thicker skins such as stone fruit or with lots of fine seeds such as strawberries or raspberries will be nicer if you strain them. You can leave them unstrained if you like, but I recommend blending them really well. Even so your popsicles will be chewier.
    • Remember the sticks! You can buy packs of biodegradable wooded sticks, or reusable sticks as is your preference. Remember to add your sticks before freezing or they will be impossible to get out of the molds and very difficult to eat!
    • Choose your popsicle molds. I like silicon ones as they are nice and flexible, so easier to get the popsicles out. And they wash well. The only downside is over time they can start to lose their shape a tiny bit, so the sides of your popsicles can end up a little uneven.

    Ingredients

    Ingredients: fresh mango, lime, white sugar, fresh cherries, vanilla extract.

    Cherries: I used wonderful fresh, in-season cherries in this recipe. Outside cherry season you could try using pitted frozen cherries, but you will need to defrost them before turning them into popsicles and freezing them again!

    Mangoes: I used wonderful fresh, in-season mangoes in this recipe. This is a great recipe for using up very ripe mangoes that are just about to go overripe. As with the cherries you could also make these with frozen mango.

    Limes: a dash of fresh lime juice adds some lovely zing and flavor to these vibrant summer popsicles. Fresh is best.

    Sugar: a little sugar brings out the flavor in these fresh fruit popsicles. If your cherries and mangoes are very ripe you may get away with adding less sugar or no sugar at all.

    Vanilla extract (optional): vanilla in a popsicle? Yes there is. The vanilla is optional, but really helps enhance the cherry flavor in these popsicles and adds another flavor layer. It's sometimes also called vanilla essence, depending on where you live. You can use either, or imitation vanilla essence, depending on your preference and budget.

    How to make cherry mango popsicles

    See the full recipe card at the end of the post for ingredient amounts and instructions.

    First make sure there is enough room in your freezer for your popsicle molds with the stick sticking out, or there will be tears!

    Pit the cherries and cut them in half. Blitz them well in a food processor. Strain through a sieve, taking care to push through as much pulp as possible with a flexible spatula (a plastic cup works well too!).

    Process shots: pitting and slicing the cherries, straining the blended cherries, adding vanilla essence and sugar, pouring mix into popsicle molds.

    Add one tablespoon of sugar and vanilla to the strained cherry pulp and mix well. Half-fill the popsicle mold and freeze for one hour. While the cherry layer is freezing start on the mango layer.

    Slice mango flesh by slicing off each cheek, scoring flesh into cubes, then popping out and slicing off. Slice the limes and half and juice the lime. Add the mango flesh to a food processor and blitz until smooth. Add the lime juice and half a tablespoon of sugar and mix well.

    Process shots: slicing the mango flesh, adding lime and sugar to blended mango flesh, pouring mango over semi set cherry, adding popsicle sticks before freezing.

    Pour the mango layer on top of the cherry layer. For distinct flavor separation leave them as they are. For more mango cherry swirl popsicles leave the cherry layer for thirty to forty-five minutes, then gently mix, poking into the semi-frozen cherry layer a bit.

    Add the popsicle lid and sticks and freeze for at least four hours, or until frozen through.

    To serve

    To serve these delicious fruit pops remove from the popsicle molds and enjoy! If you are having trouble removing them from the molds you can run them under some water for a few seconds.

    How to store

    These cherry mango pops will store well in an airtight container with some baking paper between them to stop them from sticking together for up to two months, if they last that long!

    Equipment

    • Popsicle molds and sticks
    • Food processor or stick/immersion blender with chopping bowl attachment.
    • sieve or strainer

    Ingredients

    • 3 cups (500gms) fresh cherries
    • 1 teaspoon vanilla extract
    • 1 & ½ tablespoons white sugar, divided
    • Approx. 2 large (750gms) fresh ripe mangoes
    • 2 tablespoons freshly squeezed lime juice

    Instructions
     

    • Pit the cherries and cut them in half. Blitz them well in a food processor. Strain through a sieve, taking care to push through as much pulp as possible.
    • Add 1 tablespoon of sugar and vanilla to the strained cherry pulp and mix well. Half fill the popsicle mold and freeze for 30 minuites to one hour. While the cherry layer is freezing start on the mango layer.
    • Slice mango flesh by slicing off each cheek, scoring flesh into cubes, then popping out and slicing off. Slice the limes and half and juice the lime. Add the mango flesh to a food processor and blitz until smooth. Add the lime juice and ½ tablespoon of sugar and mix well.
    • Pour the mango layer on top of the cherry layer. For distinct flavor separation leave them as they are. For swirled popsicles you can gently mix the popsicles at this point, poking into the semi-frozen cherry layer a bit.
    • Add the popsicle lid and sticks and freeze for at least four hours, or until frozen through.
    • To serve these delicious homemade popsicles remove from the popsicle molds and enjoy!

    Notes

    • Make sure you have enough room in your freezer for your popsicle molds with the stick before filling them.
    • Use very ripe fruit for maximum sweetness and flavor.
    • If you are having trouble removing the popsicles from the molds run them under some warm water for a few seconds.
